We have been wanting to try eating healthier and I love making new things. He problem is Patrick is an extremely picky eater. He likes meat, potatoes, and fruit. He will only eat canned green beans and likes his corn mixed in with his mashed potatoes. Which can make eating healthier a little more difficult. I love veggies and salad but he hates them.
Jace is also starting to become a little picky. He loves pasta. And I’m pretty sure his favorite thing is Mac n Cheese. The problem is if we give him Mac n cheese and something else he will only eat the Mac n cheese. He does still like things like cucumber and tomatoes but will not eat corn.
So I’ve started “hiding” veggies in food and so far it’s making things easier. We tried out Spaghetti Squash last night and Patrick ate it and said that he would eat it again! Lol
Here is how I made it.
Ingredients
- Spaghetti Squash cut length wise
- Spinach
- Grape tomatoes cut in fourths.
- 1 teaspoon of minced garlic
- 1 jar pasta sauce. I used Tomato Alfredo from HEB
- Cheese
- Salt n pepper
Cut the Squash and remove seeds. Put the halfs face down in a baking pan with about 1/4 water on the bottom. Cook for 40 minutes at 350 degrees. After they are done let them sit for a few mins to cool before using a spoon to get the “noodles” out. Put the “noodles” in a bowel and mix with some spinach, tomatoes, garlic, sauce, salt, pepper, and a little cheese. After it’s all mixed pour the mixture back into the squash halves and sprinkle a little cheese on top. I then popped it back into the oven for another 30 mins at 375 degrees.
It came out great! Next time I think I’m going to grill some chicken to add to the mixture to add a little more protein.
