Easy Healthy Crock pot Chicken and Rice

Everyone loves a crock pot meal. They always seem to be so simple and everything always comes out so tender and yummy. I’ve been trying to come up with some healthy meal ideas for my family and a few weeks ago I just threw some things in the crock pot and it turned out so good! We have had it several times since then and I wanted to share the recipe.

  • Chicken breasts (i used frozen but I’m sure fresh works well. The first time I used 3 breasts now I use 6)

  • 2-4 cups of water (just enough to almost cover the chicken)

  • 2 tablespoons minced garlic

  • pepper

  • Thyme

  • salt (optional)

  • Mrs. Dash salt free lemon pepper (I also just used a little lemon juice once and it was just as good)

  • Spinach added about 30 minutes before you plan to eat. (optional)

  • Brown rice added about 30 minutes before you plan to eat.

I love crock pot meals. Just throw everything but the rice and spinach  in and cook on low for 6-8 hours until the chicken is nice and tender.  Then add the brown rice and spinach about a half hour before you are planning on eating. If you don’t have one of the ingredients I used its ok! Add what you like and leave out what you don’t care for.
